Oftentimes, couples who get married in our space decide to do something a little different than your typical wedding cake. When that's the case, we always recommend calling Katherine Duncan, from Katherine Anne Confections.

Essentially our neighbor in Logan Square with her Confiserie located just down California avenue, Steve was excited to go visit and take Katherine's portrait.

GHL: How long have you been in the chocolate business?

Katherine: I've had my company since the fall of 2006, so 6.5 years.

GHL: What path led you to making chocolates and candies?

Katherine: I grew up making truffles, caramels, marshmallows, and other goodies with my mom for Christmas presents. I always loved working with sweets, and actually had a business called "Katherine's Karamels" when I was about 13 or so. I sold the caramels individually at my dad's work for .25 each (or 5 for $1! ) It was destined!

GHL: What steps do you take to increase sustainability?

Katherine: Our first goal is delicious products, which naturally leads us to local produce. We try to get every possible ingredient locally, and we grow our own herbs behind the confiserie in the summer (we're planting this week - can't wait!) We are starting composting this week thanks to Collective Resource, and of course recycle and whatnot, too. Our packaging is all recyclable, biodegradable, or compostable. The list goes on!

GHL: Seasonally, which flavors/ingredients do you look forward to working with?

Katherine: Summer and fall are my favorites, as I love the local fruits. We do an awesome Apricot Basil truffle every summer. Peach Lavender, Roasted Pear + Candied Walnuts + Goat Cheese .. we have so much great Michigan produce coming in after July!

GHL: Are there any culinary trends you are particularly excited about at the moment?

Katherine: Marshmallows are very trendy right now, which is exciting for me! We take pretty classic flavors to the next level, using ingredients like locally blended earl grey tea, coffee that's roasted 4 blocks away, and freshly ground black pepper. Salted caramel is a trend that is still new to some people, though we're skewing even more towards savory treats, such as the bacon and chocolate trend, or other unusual ingredients. People like to be surprised.
